2001 CABERNET SAUVIGNON, CARMEL VALLEY ESTATE
2003 CHARDONNAY, MONTEREY
Tasting Notes: Dark ruby garnet color with a cherry rim. Perfumery cherry blossoms, blackberries and plum aromas mix with a spicy anise/cedar and a smoky oak nose. Bright blackberries lead to a spicy/peppery cassis/anise middle that softens to a dark bittersweet chocolate and cedar finish. This big, bold and rich Cabernet with moderate tannins will allow the power and elegance of this wine to age through 2017 at 55°F.
Food Companions: “Where’s the beef?” Also try some sweetbreads, since we’re talking serious cholesterol. Grilled salmon accentuates the wine’s Bing cherry flavors, as do mahi mahi, and yellow fin tuna. Pasta with cream sauces (go light on tomatoes) is another excellent match-up.
Tasting Notes: Medium dark garnet color with a pink rim. Cedar, anise, blackberry/black cherry nose with cocoa and vanilla bean highlights. Elegant blackberry fruited entry expands to a firm core of cherry and red currant flavors that are supported by firm acidity and fine tannins. A bit more Bordelaise than Californian in style. Cellar through 2010.
Food Companions: Salmon, roast pork and pasta with cream sauces are perfect for this young wine's bright fruit and fine tannins. After 3-5 years of bottle age, pair the richer, more complex nose and flavors with swordfish, albacore, roast fowl or roast beef.
2002 "SIAS CUVEE" ZINFANDEL, CARMEL VALLEY ESTATE
Tasting Notes: Dark garnet color with red rim. Spicy cedar, plum, black cherry and rose petal nose. Nicely balanced plum, black cherry, anise and vanilla flavors finish smoothly with notable hints of cinnamon and bittersweet chocolate.
Food Companions: Serve with hickory-smoked barbecues, grilled mackerel, Thai food . . . try exotic, full-flavored dishes with this wine’s luscious, youthful fruit.
2003 SAUVIGNON BLANC, FAMILY RESERVE
Tasting Notes: Brilliant pale green straw color. Bright pomello, pear and citrus nose complexed by crème brulé and herbs. Rich pomello, tart Asian pear and key lime fruit flavors expands to a rich, creamy mid-palette that leads to a crisp, white grapefruit and mineral finish…very Bordeaux Blanc! Very unctuous, and totally irresistible. Cellar at 55º F through 2009.
Food Companions: Fresh oysters on the half-shell, steamed clams with garlic, stir fried shrimp – evened “blackened” fish and poultry dishes will be the perfect foil to the Family Reserve Sauvignon Blanc’s combination of ‘tanginess’ and ‘unctuousness’.
Tasting Notes: Brilliant, green-tinted straw gold color. Floral honeysuckle, Asian pear, lychee and roasted grain aromas perfume the nose. An elegant, round, pear-apple entry expands into a fruity, lime, Granny Smith apple and minerally mid-palate that finishes crisply with nuances of citrus, green apples, and hazelnut. Cellar through 2007.
Food Companions: Match our Chardonnay’s crisp citrus/apple flavors with roast chicken, quail, or Cornish game hen as well as salmon, halibut, sea bass and pastas with cream sauces.
2004 ZINFANDEL ROSE, CARMEL VALLEY ESTATE
Tasting Notes: Salmon pink color. Perfumed nose of strawberries, maraschino cherries, rhubarb and ginger. Fruity, strawberry laden entry expands to a bold mid-palate bursting with strawberry, kiwi and pie cherry flavors that finish just off dry, crisp and with a hint of spritz.
Food Companions: Anything hot such as Cajun or Thai food, spicy, bold and beautiful...our Zin Rose will soothe the savage beasty flavors that the American melting pot has grown to love. It's a great sippin' wine too.
